Ingredients
- 12 eggs
- 1 cup milk
- Veggies of choice (throw in whatever you have in the fridge)
I used:
- 1 broccoli crown, chopped
- 1 small onion, diced
- 1 green bell pepper, diced
- Garden cherry tomatoes, halved
- About 2 cups shaved deli ham
- 1½ cups shredded Colby Jack cheese
- Salt and pepper, to taste
Directions
- Heat the oven to 375°F.
- Whisk the eggs and milk together. Stir in the veggies, ham, cheese, salt, and pepper.
- Pour into a baking dish.
- Bake for 35 minutes, until set.
- Slice it up, pack it away, and breakfast is covered for the week.
