When the storm duty call comes, pivot toward dishes that taste better the longer they sit on “warm” — or that reheat beautifully the next day. Baked ziti is one of those hold meals that wins for picky kids and hungry linemen alike.

Ingredients

  • 1 lb ziti or penne pasta
  • 1–1½ lbs ground beef or Italian sausage (or a mix)
  • 1 jar (24 oz) marinara or your favorite sauce
  • 15 oz ricotta (optional but cozy)
  • 2 cups shredded mozzarella
  • ½ cup grated Parmesan
  • 1 egg (if using ricotta)
  • Italian seasoning, garlic, salt & pepper
  • Olive oil

Steps

  1. Cook pasta just shy of al dente; drain.
  2. Brown meat with garlic and seasoning; stir in sauce and simmer a few minutes.
  3. Mix ricotta with egg, Parmesan, and a pinch of seasoning (skip if you’re keeping it simple).
  4. Layer sauce, pasta, ricotta, and mozzarella in a baking dish (or slow-cooker-safe insert if you’re going low and slow).
  5. Bake at 375°F until bubbly, or hold on warm in a slow cooker once heated through.
  6. Rest a few minutes, then serve — or pack leftovers for later.

Linewife notes

  • Hold: Keeps well on warm; leftovers reheat for day-two dinner.
  • Lunch box: Slice a square into the heat-up lunch box with a side of fruit or chips.
  • Storm pivot: Assemble earlier on a calm forecast day so dinner still happens if the phone rings.
