Flexible, freezer-friendly, and perfect for nights when dinner might move an hour — or three. Everyone builds their own plate; you stay out of short-order cook mode.

Ingredients

  • 2–3 lbs boneless chicken breasts or thighs
  • 1 cup salsa or taco sauce
  • 1 packet taco seasoning (or chili powder, cumin, garlic, paprika)
  • Juice of 1 lime (optional)
  • Tortillas or taco shells
  • Toppings: cheese, lettuce, tomato, sour cream, avocado, hot sauce

Steps

  1. Place chicken in slow cooker; cover with salsa and seasoning.
  2. Cook on low 6–7 hours or high 3–4 hours until shreddable.
  3. Shred in the pot, stir, and keep on warm.
  4. Warm tortillas and set out toppings for a DIY taco bar.
  5. Refrigerate leftovers for bowls, quesadillas, or lunch-box tacos tomorrow.
